Our goal is to deliver the expression of our soils, our weather, our farming, and our people through wine. We seek to showcase the elegance and purity of our Catoctin shale, specific to only this place. In order to maintain the potential of the vineyard, we practice low intervention winemaking, but with meticulous precision:

Reds

  • Picked according to taste, not chemistry

  • Hand harvested, triple sorted

  • Fermented in concrete

  • Gentle extraction during fermentation to promote balance and elegance

  • Wine transfers done with nitrogen via pressure racking

  • No filtration

Whites

  • Picked with an emphasis on preserving natural acidity

  • Hand harvested, triple sorted

  • Fermented in barrel

  • Élevage for 10 months on fermentation lees

  • No fining, sterile filtration
